Why “Sea-Grade”?

“Sea-Grade” is our translation of “Sea-Kyu”, a play with words in Japanese used for this event. In Japan people say “B-Grade” (B級 “Bii-Kyu”) for all kinds of food that are casual, inexpensive and generally found on street tents, festivals, fast-food, service areas of expressways and etc. This connotes to a hidden “A-Grade” (A級 “Ei-kyu”), that would otherwise be used to upscale, refined culinary (not widely used though - maybe we don’t hear the term “Ei-Kyu” just because any decent and proper meal is considered “A”, we wonder?). So, since Japanese language doesn’t have the phoneme for “si” (as in “simple”), the letter “C” sounds as “shii”, the same for the English word “sea”. So, in playing with “C” and “Sea”, the “Sea-Grade” (“Shii-Kyu”) was born, as like following after A and B. However, we doubt it has anything with the actual quality of the dishes. For us, it’s all A-Grade!
